COCONUT SUGAR

Coconut sugar(Coconut Palm) is a natural, unprocessed sweetener that comes from the flowers of coconut trees. It is one of the most productive and widespread plants in the world, Cocos nucifera and grows in the islands and coastal areas in most tropical climates. Our coconut sugar comes from Java - an island of Indonesia where high humidity and abundant rainfall offer excellent cultivation conditions. Unlike other sugar products grown as plants only, coconut trees grow in the wild and benefit the ecosystem. According to the United Nations Food and Agriculture Organization, coconut sugar is one of the most viable sweeteners in the world, producing up to 75 percent more sugar per acre of sugar cane.

Coconut sugar is considered to be one of the healthiest sweeteners, as it naturally has a low glycemic index (GI). When eaten, carbohydrates (starch and sugar) are converted into glucose and pumped into the bloodstream. The low glycemic index releases glucose more slowly and steadily and is, therefore, better assimilated into the body to control blood sugar levels. Coconut sugar is rated GI 35.

By comparison, most products made from cane sugar have a GI of about 68. This makes coconut sugar a preferred option for diabetics who have to follow a diet low in glycemic.
