RED SPLIT LENTILS

 Lentils were part of the human diet since the Neolithic era and were one of the first domesticated crops in the Near East. Archaeological evidence suggests that it was fed 9,500 to 13,000 years ago. In our current production of red lentils, Turkey has the highest production rate in the world (over 80%). One of its varied colors is the red-orange red lentils known to us that contain less fiber concentration than green lentils (11% instead of 31%) and because of the size they boil more quickly (about 15 minutes) They are more digestible especially for people with irritable bowels. With about 30% of their calories from protein, lentils have the third highest protein level, by weight, of any legume or nut, after soy and cannabis. Proteins include the essential amino acids isoleucine and lysine and lentils an inexpensive source of essential proteins in many parts of the world, which have a large number of vegetarians. Lentils also contain fiber, folic acid, vitamin B1 and minerals. It is also a very good source of iron and contains more than half of the daily permitted iron of a person in a cup portion
