HELLENIC PRODUCT MADE FROM WHOLE WHEAT GRAIN

Triticum dicoccum or emmer is one of the most ancient species of wheat in Greece. It is a cereal ideal for mild and sustainable agriculture, and it does not need fertilizers and pesticides, making it an excellent food while processing it gives high nutritional products. Emmer is one of the earliest cereal seeds since it has been cultivated in Greece since the Paleolithic period. Later, in the copper season, other cereals, such as einkorn, spelt and later mutations such as soft, hard, appear. According to findings in excavations in Asia Minor, seeds of emmer have been discovered since 12,000 BC. Besides, it is known that the ancient Greeks ate emmer wheat bread, considering it to be very important and nutritious. In antiquity, they did not eat bread from simple wheat (einkorn). They had it as animal feed and called it "pyros". We have some references from Homer to the Iliad, but also from various classics. Indeed, it is said that Alexander the Great was feeding his army only with the particular cereal.
